Purple blueberry smoothie bowl with banana, coconut, chia and peanut butter

This smoothie bowl has everything I love in a breakfast: an incredible colour, an almost ice-cream-like texture and plenty of toppings in every spoonful. The base is simply blueberries and frozen banana, with just enough almond milk to help the blender along.

And then comes the peanut butter. Its rich flavour is perfect with the gentle sharpness of blueberries. Add coconut, chia seeds and a few whole berries, and this bowl becomes as joyful to make as it is to eat.

Ingredients for one smoothie bowl

  • 150 g frozen blueberries
  • 1 ripe banana, sliced and frozen
  • 50 to 80 ml almond milk
  • 20 g vanilla protein powder, optional
  • For the toppings: a small handful of blueberries, 1 tablespoon desiccated coconut, 1 teaspoon chia seeds and 1 generous tablespoon peanut butter

Method

  1. Place the frozen blueberries, frozen banana and protein powder, if using, in a blender.
  2. Add 50 ml almond milk and blend. Scrape down the sides if needed, adding a little more milk only when the blender needs it.
  3. Stop as soon as the mixture is smooth, thick and firm enough to eat with a spoon.
  4. Spoon it into your favourite bowl, then add the blueberries, coconut and chia seeds.
  5. Drizzle the peanut butter over the top and enjoy straight away.
