My creamy almond milk porridge with banana and blueberries

Creamy porridge topped with banana, blueberries and almond butter

Some mornings call for a fresh, vibrant breakfast; others call for something warm, soft and comforting. This almond milk porridge is exactly that: a simple creamy bowl, brightened by the beautiful colours of blueberries and banana.

I warm the oats, almond milk and chia seeds together in a saucepan. Within minutes, the mixture turns wonderfully creamy. All that is left is to add the fruit and a spoonful of almond butter that slowly melts into the warm porridge.

Ingredients for one generous bowl

  • 50 g rolled oats
  • 200 ml almond milk, plus an extra splash if you prefer a looser porridge
  • 1 teaspoon chia seeds
  • 1 small banana
  • A generous handful of blueberries, about 60 g
  • 1 tablespoon almond butter

Method

  1. Add the oats, almond milk and chia seeds to a small saucepan.
  2. Cook over a low heat for 5 to 7 minutes, stirring regularly, until beautifully creamy.
  3. Add another splash of almond milk if the porridge becomes thicker than you like.
  4. Spoon into a bowl, then top with the sliced banana and blueberries.
  5. Finish with the almond butter. Let it melt into the warm porridge for a few seconds, then enjoy.

A warm bowl, a little fruit and a swirl of almond butter: sometimes the simplest mornings feel the best.
